Winner, Winner, Chicken Dinner(s)!

Did you know that you can buy an entire chicken at the grocery story for less than $6? Well, you can. And if you are willing to put up with a little home butchering, it can make enough food to last you almost a week. I bought a chicken last weekend for our Sunday meal, and used the last of it just yesterday. This is a huge help when you are trying to mitigate the expensive cost of meat in your grocery budget. First, it needs a little work. I roasted the chicken for our weekend dinner, and I always butterfly it because it cooks faster that way. I'm not going to sugarcoat it--butterflying a chicken is kind of gross. Really gross, actually. But if you can overcome your squeamishness, it cooks great. There are a lot of great tutorials for doing this on YouTube, but here is how I did it.  Step 1: Remove the giblets (the heart, neck, and gizzard). Weeknight Enchiladas: An Exercise in Cheese

 I love cheese. Cheesy, cheesy cheese. I also love meals that take less than fifteen minutes to make on nights when I have class and Norris is home late from work. This is a recipe that combines those two loves in perfect harmony. It is ridiculously simple, but easy to dress up if the situation warrants it. I don't think you could dress it down much more. So here is what you need to start: a glass baking dish (if I am cooking for a group I use a 9x13, but for just us two, I use the perfect square one), flour tortillas, 2 bags of Mexican blend cheese, a can of white chicken breast, a giant can of enchilada sauce (I use mild because I am a weenie) and one can of chiles (again mild). Most of these ingredients can be found on the Mexican aisle of the grocery store, which, at my Walmart, is the same aisle as the Spaghetti aisle. Put the shredded cheese in a large glass bowl. When you live in a place like Oklahoma, you are caught in a completely unique cultural situation. There are influences from all corners of the country, pulling you in a million different societal directions. And this means one, particularly sad thing: some women in Oklahoma don't know how to make fried chicken. Some are even afraid of it.Well, I am here to tell you that fried chicken can be easy--it can even be therapeutic. And it can be the perfect comfort food for a relaxing evening after a long day at work. So here's how it's done: These are the spices that will get you started. Salt, pepper, salt, Chef Paul Prudomme's Poultry Magic, seasoned salt, and parsley flakes. The parsley doesn't necessarily add a lot of flavor, but it does add some color and just makes things look more flavorful. So use it.  Put some flour in a bowl, and add the spices. Mix it together.
